Lets face it. Where I live, there used to be a Qdoba. It was my beloved go to place for a naked burrito. When summer time came rollin around, you bet I'd be ordering Mango Salsa on my amazing naked burrito. If you don't know what Qdoba is...its exactly like Chipotle, just a little different. $5 for a huge heapin burrito bowl with a tortilla on the side of course.

So a week and a half ago I saw a friend post a picture of the "Closed for business" sign on Qdoba's front door on Instagram. OMGeee. NOT cool. My beloved mango salso with cilantro rice, black beans, chicken, romain lettuce, tortilla chip strips, sour cream, quacamole is GONE! Not in my town anymore.

The other day I was in need of mango salsa. Had to have my fix so I looked at what I had in the fridge and started to concoct something I could use on a taco. Here it is! Let me just mention that I would have added more stuff but this is all I had.

What you will need:

2 mangos cut up
cilantro
white onion
cucumber
sugar

1. Cut up your mangos. There is a huge pit in it, so of you dont' know how to cut a mango check HERE

2. Cut up cucumber, onion and cilantro and add to the cut up mango...

3. Mix all together and add a little bit of sugar.

Thats it!
